This variety with a similar appearance to parsnip, but
thinner. It has an oyster flavour and is wonderful in both
flavour and texture. Likes a rich, deep, well drained and
stone free soil. The seeds are slow to germinate and may
not shoot for up to 3 weeks.
Salsify can be diced, sliced or used whole to be boiled,
steamed or roasted. It can also be either shredded or grafted
to be used in salads. It contains carbohydrate inulin, and is
said to be suitable for diabetics.
